- 2 medium sweet potatoes, peeled and chopped into cubes
- 1 cub fresh or frozen corn kernels
- 1/2 red pepper, deseeded and chopped
- 1 tbsp molasses
- Steam sweet potato for about 15 minutes
- Add corn and chopped red pepper. Cook until vegetables are tender, about 5 minutes.
- transfer to a bowl and let cool. Mix in molasses and puree or mash to desired consistency, adding water if necessary.
Makes about 25 ounces.
