Sweet Potato with Corn and Red Pepper*


  • 2 medium sweet potatoes, peeled and chopped into cubes
  • 1 cub fresh or frozen corn kernels
  • 1/2 red pepper, deseeded and chopped
  • 1 tbsp molasses


  1. Steam sweet potato for about 15 minutes
  2. Add corn and chopped red pepper. Cook until vegetables are tender, about 5 minutes.
  3. transfer to a bowl and let cool. Mix in molasses and puree or mash to desired consistency, adding water if necessary.


Makes about 25 ounces.
